Ingredients:  
1 – 8 oz. package cream cheese
1 – 8 ¼ oz. can of crushed pineapple, drained
8 oz. Kraft sharp cheddar cheese, shredded
½ cup chopped pecans
¼ cup chopped dried apricots (soak apricots in sweet, drinking sherry)
1 teaspoon chopped crystallized ginger

Directions:

Combine softened cream cheese and pineapple mixing until well blended. Add remaining ingredients and mix well. Chill. Shape into ball, slightly flatten top. Roll with coconut if desired.
