3/4 tomato, chopped
3/4 (4 oz.) can sliced mushrooms, drained
3/4 large onion, minced
3/4 scallions, chopped
3/4 (1 lb.) fillet salmon
salt & pepper to taste
2 1/2 tsp. butter, cut up
3/4 lemon, sliced
1 can rotella

Directions:

Preheat an oven to 375º. Line a baking dish with enough aluminum foil to be able to fold over all ingredients. Stir together the tomato, mushrooms, onion, and scallions in a bowl: spread into the bottom of the prepare dish. Lay the salmon fillets over the mixture. Season with salt and pepper. Dot the salmon with the butter. Arrange the lemon slices a top the butter pieces. Fold the foil over the salmon, and press edges together to seal. Bake in the preheated oven until the fish flakes easily with a fork, about 1 hour.
