2 1/2 cups flour
2 cups sugar
1 1/2 tsp salt
1 1/2 tsp baking soda
1/4 tsp baking powder
1 tsp cinnamon
12 tsp allspice
1 1/2 cups applesauce
1/2 cup shortening
1/2 cup water from raisins
2 eggs
1 cup raisins
1/2 cup chopped walnuts or pecans

Directions:
Directions:
Put raisins and spices in a pot, add water to cover, and boil for 20 minutes. Cool, then drain, reserving liquid. Add water to make 1/2 cup.

In bowl, mix first five ingredients. Add applesauce, shortening, and liquid. Add eggs, beat 2 minutes. Stir in raisins and nuts. Bake in 2 loaf pans or large cake pan at 350 for 50 to 60 minutes. Keeps very well.

Boiled raisin cake - yummy! Makes a great gift for a friend. Just bake in a paper loaf pan, wrap in saran and put a bow on it.
