1 TBL vegetable oil
1 pound of large elbow pasta
1/2 cup butter PLUS 1 TBL butter
2 cups 4 blend Mexican cheese
2 cups half and half
1 cup Velveeta, cut into small cubes
2 large eggs, lightly beaten
1/4 tsp salt
1/4 tsp pepper
1/2 tsp onion powder
1/2 tsp garlic powder

Directions:

Preheat oven to 350 degrees. Lightly butter or spray 2 1/2 quart rectangular casserole dish. I use 9 x 13 glass. Bring a large pot of water to boil over high heat, add the oil then elbow pasta. Cook until just tender (approximately 7 minutes). DO NOT overcook. Drain well.

Place 1/2 cup butter in warm pasta pot to melt. Once melted, add the pasta to butter. Mix in all spices, 1 1/2 cups of cheese, half and half. Once blended, add cubed Velveeta cheese and beaten eggs. Transfer to buttered casserole dish. Cut last TBL of butter into very small cubes. Sprinkle with remaining 1/2 cup of cheese and dot with small cubes of butter.

Bake until it is bubbling around the edges, about 35 minutes. Serve hot

You can also add bacon or any other spices (small amount of red pepper flakes) to taste.
