4 Quarts tomatoes-chopped
3 Large Onions
1 lb (5-9) Jalapeno Peppers (dice with gloves on-take ends off but use seeds)*
3 tbsp. Salt ¾ cup sugar
½ cup oil Garlic 6-10 cloves
1/3 cup vinegar

Put all ingredients in a large dutch oven. Bring to boil & simmer a bit. Take excess juice off top before putting in jars.Put in sterilized hot jars & lids so jars will seal. *add peppers gradually taste for hotness

I have made this recipe for years as it is the favorite of my family. I have found that if I put the excess juice that I have skimmed off the top in a jar and refrigerate it is great to add to chili or soup. It has great flavor and will add a bit of zip.
Recently I added a small can of tomato paste to the recipe and it thickens the salsa nicely.
