2 lbs lean ground beef
3 hot (or mild) Italian sausage-fried and broken into pieces
1/2 c canned beef broth
1/3 c ketchup
2 eggs
1 c Italian seasoned bread crumbs
1/2 c minced celery
3 green onions minced
1/4 lb cheddar sliced
1 1/2 tsp salt
1/2 tsp pepper
2 c hot seasoned mashed potatoes-must be instant potatoes
1/3 c Parmesan cheese
2 tbl melted butter
paprika for sprinkling

Directions:
Directions:
1. Combine beef (uncooked ) sausage (cooked), broth , ketchup, eggs, bread crumbs, celery, onions, salt&pepper in a large bowl. Mix well with hands. Press 1/2 mixture into lightly greased 6 c mold or 9 x 5 x 3 inch loaf pan. Add all of the cheese in a layer then press remaining meat mixture on top.
2. Bake 1 hour at 350 degrees or until the loaf shrinks away from pan. Remove from loaf pan by placing on a cookie sheet-pour off grease.
3. Make 2 c of instant mashed potatoes. In a bowl combine potatoes with Parmesan. Frost the meatloaf-top and all sides. Brush with melted butter and sprinkle with paprika.
4. Bake 20 min. At 400 degrees or until potatoes are golden brown.

Just as yummy the next day. Even good on sandwiches with the mashed potatoes!

I've been making this for years. It's a family favorite. It's just as yummy the next day and even good in sandwiches including the potato frosting.
