5 1/2 cups dry bow tie pasta
2 Tbsp. Olive oil
1 chopped onion
2 cups sliced fresh mushrooms
4 cloves garlic, minced
8 cups fresh spinach
2 tsp. Snipped Fresh thyme
1/4 teaspoon black pepper
1/4 cup Parmesan cheese
Crushed red pepper

In a 4qt pot cook bow tie pasta according to package directions., drain.
Meanwhile in a very large skillet heat oil over medium heat. Add mushrooms, onions, and garlic; cook and stir for 2-3 mins. Until mushrooms are tender. Stir in spinach, thyme, and pepper. Cook1 min. Or until heated through and spinach is wilted. Stir in cooked pasta, toss gently to mix. Sprinkle with cheese and if desired, crushed red pepper.
