3 tbsp. extra virgin olive oil
2 large Vidalia onions, sliced
3/4 lb. smoked ham, cubed
fresh mushrooms, sliced
5 large eggs
1 pint heavy cream
salt and pepper
mozzarella cheese

Prepare pie crust and place inside a 9" spring form pan. Press dough firmly into the bottom and up sides of pan so it fits tightly. Place pan on a sturdy cookie sheet for easy movement.

Preheat oven to 375º

To Make Filling:

Heat a skillet over med-low heat. Coat pan with oil. Add onion and mushrooms. Cook till caramelized. Toss in ham and cook another 10 minutes or till ham gets some color on it.

Meanwhile, in a large bowl beat the eggs until frothy. Add the cream to the eggs. Season with salt and pepper.

Arrange the hot ham mixture in the bottom of the pie crust. Sprinkle with mozzarella cheese. Pour cream mixture over the ham mixture. Filling should be about 1" from the top of the pan.

Cook 45 minutes to 1 hour or till set.
