"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 head cabbage, widely shredded
1 1/2 T. freshly minced onion
1 stick butter or margarine
salt and pepper
Noodles:
6 eggs
3 teaspoons salt
6 T. oil
1 1/2 cups milk or water
4 1/2 cups flour

Directions:
Directions:
To make noodles, combine ingredients into dough and rest in fridge. Bring pot of water to boil. Pass dough through a spaetle maker into the boiling water. Once noodles rise to the service, boil 30 seconds more. Drain and rinse.

In a large skillet, melt butter over medium heat. Add onion, cabbage, salt and pepper. Stir occasionally. The cabbage and onion will carmelize (takes 20 minutes or so). If the mixture looks dry, add butter or water. Once the mixture is well carmelized, toss in noodles and heat through.
