2 eggs
1/2 C milk
1 1/3 C flour
1 Tbsp sugar
1 tsp salt
1 tsp baking powder
2 tsp melted shortening
2 C canned kernel corn

Directions:
Directions:
Beat eggs, add milk and mix. In another bowl, sift together flour, baking powder, salt and sugar. Add to milk mixture. Add shortening and corn. Beat together until blended. Drop by spoonfuls into pre-heated shortening. Fry at 375º until golden and crisp. Drain on paper towel. Serve with maple syrup.
