6 lb. pork loin
1/2 tsp dried sage
1/2 tsp dried thyme
1/2 tsp dried rosemary
4 tart apples, peeled and cut into slices or chunks
1 red onion, chopped
3 tbsp. brown sugar
1 c apple juice
2/3 c real maple syrup
salt and pepper to taste

Directions:
Directions:
In a small bowl, combine all dried herbs and salt and pepper. Rub over roast.
Preheat oven to 325º

Place roast in a shallow roasting pan. Bake 1-1/2 hours. Drain fat.
In a medium bowl, mix apples, onion, and brown sugar. Spoon around roast and cook 1 hour more till temp is 160º

Transfer to a serving platter.
Skim excess fat from remaining juices. Pour drippings into medium skillet. Stir in apple juice and syrup. Cook and stir over med-high heat until reduced by half ( about 1 cup).
Slice roast and serve with sauce.

This is beautiful roast when finished with the apples around it on a platter. It's one of my Dad's favorites.
