1 can tuna or chicken, drained (ham or turkey can also be used)
1 cup grated carrots
2 cups diced celery
Onion and/or green pepper to taste

Stir together. Mix with mayo and chill. Just before serving, add about 2 cups chow mein noodles (shoestring potatoes can be used, but they get a bit soggy).
