Cardiff Crack Tri Tip --get at Seaside Market, Cardiff or Daniel's Market in Bonsal. This is 3-3 1/2 lbs of tri tip with "Santa Rosa" spices. Then they tumble them.

Directions:

Turn on barbecue to highest setting--get it good and hot.

Cook and put down lid for 5 minutes each side at this high setting.

Turn center burners to off and the outside ones down to medium. Put meat in the center, so no direct heat and cook 10 minutes each side (lid down).

Turn off burners. I usually remove the meat and place it in a cool oven or wrap foil around it. It will continue cooking for 15 minutes as it cools down.

Each tri-tip serves 6-7 people.
