1.5 lbs ground beef
1 bunch of celery cut into ¼ inch slices
1 medium onion diced
2 16 oz. cans peeled tomatoes (I like fire roasted)
1 11.5 oz. can tomato juice
1 16 oz. can kidney beans
1.5 cups elbow macaroni
salt to taste
chili powder to taste
1 tsp cumin

Directions:

In large stock pot brown meat with onion and celery until meat is browned. Add all tomato juices (reserve tomatoes until later) add 16 oz. water, chili powder and simmer for an hour.

Add cumin, tomatoes, beans and 16 oz. of water and bring to a boil.

Add macaroni, salt, and additional chili powder if desired and cook until macaroni is done.

Serve with sliced Velveeta cheese.

This is my dad's recipe which he started making in the 1950's. During the depression, the Mid-West states would serve chili over noodles so that it would go a lot further and fill you up more than the chili by itself. This is my families style of chili and should not be confused with chili mac which my husband Shawn always tries to call it!
