2 c flour
1/4 cup white sugar
1 TB baking powder
2 tsp baking soda
3/4 tsp salt
2 cups buttermilk
2 eggs
4TBSP butter, melted
1/2 tsp vanilla extract

Directions:
Directions:
1) In a large bowl, combine flour, b.powder, b. soda, sugar, and salt.
2) In a separate bowl, beat together eggs, vanilla, & buttermilk.
3) Pour the wet mixture into the dry mixture, making a well, and using a wooden spoon to mix. Then add the melted butter & stir briefly. Add splash of milk, if needed, in order to get to the right consistency (not too thick, not too thin). DO NOT OVER STIR or pancakes will be tough. Batter should be slightly lumpy.
4) Let batter rest for 10 minutes.
5) Heat a lightly oiled griddle over med high heat until a drop of water sizzles across it.
6) Pour approx. 1/3 cup batter onto oiled griddle. Sprinkle blueberries on wet side of pancake (optional). Flip over once edges appear dry. Brown on both sides. Serve hot.

TO FREEZE: Let extra pancakes cool on a cooling rack to prevent sogginess. Put wax paper between each cooled pancake and place them in a gallon sized freezer bag.
