Pie pastry for a double crust pie (I use the French pie crust recipe!)
8 granny smith (med size) apples, or other tart apples
1/2 cup unsalted butter
3 TBSP flour
1/2/c. white sugar
1/2 c. packed brown sugar
1/4/c. water
1/4 tsp cinnamon
Pinch of salt
1/2 tsp vanilla

Directions:
1. Melt butter in saucepan. Stir in flour to form a paste. Stir & simmer for 2 minutes.
2. Add white sugar, brown sugar, cinnamon, salt, and water. Bring to a boil. Reduce temperature and simmer 5 minutes.
3. Remove from stove and stir in the vanilla.
4.Place the bottom crust in your pan. Fill with peeled, uniformly sliced apples, mounded slightly.
5. Pour the sugar syrup over the apples.
6. Cover with top crust, creating openings to let steam escape while baking.
7.Bake at 425 degrees for 15 minutes. Cover edges of crust with foil to keep from browning too quickly.
8. Then reduce temperature to 350 degrees and continue baking for 35-45 minutes, or until apples feel tender when poked with a fork.
Note: If pie turns out too watery (from extra juicy apples), you may need to increase the flour by 1 TBSP next time when cooking the sugar syrup.
