2 Cups sugar
4 Eggs
3 Cups flour
1 Cup coconut milk
2 Tsp. vanilla
Filling: 1 Cup of sour cream
3/4 Cup sugar
1/4 Cup milk
1/2 Cup coconut flakes

Directions:
Directions:
Cream together the butter and sugar with a paddle attachment on the mixer for about 7 minutes. Add eggs one at a time. Alternate adding the flour and coconut milk a little at the time, ending and beginning with the flour. Add the vanilla. Divide the batter between the three 9" pans, and bake at 350 degrees for 25 minutes. Cool on wire racks for about 10 minutes and remove from pans and allow to cool completely. When the layers have cooled, spread 1/3 of the filling over the first layer, and then top it with the second. Spread another 1/3 of the filling over the next layer and then top with the third, and top with remaining filling. Frost the top and sides of the cake with the frosting.

Frosting: Beat together two 8-ounce packages cream cheese and 1/2 cup butter. Slowly add 2 cups of confectioner's sugar, 1/2 cup of sweetened condensed milk and 1 1/2 tsp. vanilla.
