1 lb. pork tenderloin, cut into 1/4 " slices
2 T. butter
1/2 tsp. seasoned salt
1 c. carrots, sliced (approx. 2 carrots)
1/2 c. onion, chopped (approx. 1 medium onion)
1/2 c. celery, sliced (approx. 1 medium rib of celery)
1 c. fresh mushrooms, sliced
14 1/2 oz. can beef broth
2 T. all purpose flour
1 T. ketchup
1/4 tsp. dried thyme leaves

Directions:

Spray large skillet with non-stick spray. Sprinkle tenderloin with seasoned salt and cook over medium-high heat for 4-6 minutes, turning once til brown. Remove pork from skillet and set aside. In same skillet, combine butter, carrots, onion and celery. Cook 4-5 minutes, stirring occasionally, until vegetables are crisp-tender. Stir in mushrooms; cook 2 minutes. In small bowl, mix beef broth and flour until smooth; add to vegetables in skillet. Add thyme leaves and ketchup. Cook uncovered about 10 minutes, stirring occasionally, until vegetables are tender. Stir in pork. Cook 4-5 minutes longer until no longer pink in the center. Serve with noodles or mashed potatoes.
