BANANA BREAD
1/2 c. shortening (Crisco) (I use coconut oil)
2 eggs
1 tsp. soda
1 c. ripe bananas
1 c. sugar (or 1/2 cup sugar and 1/2 cup brown sugar)
2 c. flour
1/2 tsp. salt
1/2 c. nuts (optional)
1/2 tsp. cinnamon
1/4 tsp. Ginger, allspice and nutmeg
1 tsp. vanilla
(I sometimes add 1/4 cup applesauce)

Cream shortening and sugar; add eggs, flour, soda, salt and ripe bananas. And spices and vanilla. Blend in nuts and mix well. Bake at 350 degrees for 40 to 50 minutes. This bread freezes well.
