Ingredients: 1 cup shortening 2 cups sugar 4 eggs 2 teaspoons vanilla 1/2 cup plus 2 tablespoons dry baking cocoa powder 4 cups flour 2 teaspoons baking powder 2 teaspoons baking soda 1/2 teaspoon salt 2 Tablespoons milk

Directions:Make Whoppie Pie filling first-so it can cool as you make the "cookies"/"cakes".
Heat oven to 350º.
1. Sift dry ingredients (flour, baking powder, baking soda, salt, cocoa). Set aside. 2. Cream shortening & sugar until fluffy and smooth. 3. Add one egg at a time-mix. 4. Add vanilla. 5. Add dry mixture a little at a time. You may add a Tablespoon of milk at a time if batter gets too stiff. 6. Mix until just combined. Avoid over mixing. 7. Drop by spoon-mixture onto parchment lined cookie sheet-2" apart. Try to ration out the drops to be about the same size. OR Roll a ball with hands and flatten slightly onto cookie sheet. 8. Cook 7-8 minutes or until toothpick comes out clean. 9. Cool before filling with Nana's Whoopie Pie filling! |

Notes: Nana used to be a champion baker who not only enjoyed cooking sweets..but eating them also.As a pre-schooler I started helping her cook sweets and, of course, eat them for our little "tea parties" which happened during my brothers'(Joey and Paul) nap time. What a great way to have time alone with my MOM! Family cooking has been a tradition in my own little family too! Keep the tradition going kids!
