Ingredients: 1/2 cup milk 2 Tablespoons flour 2 Tablespoons butter
1/2 cup granulated sugar 1/2 cup shortening 1 teaspoon vanilla

Directions:Make the BASE first-cool completely before adding to second mixture.
BASE: 1. Melt butter (I use the microwave) in small mixing bowl or quart saucepan. 2. Stir flour into butter to make a paste. 3. Stir in milk. 4. Cook milk and butter/flour mixture until thickened. Stovetop cooking: stir constantly. Microwave cooking: Stir every minute. 5. Cool completely. This is important! The mixture will begin to look like a thick stew and will turn to paste as it cools.
SECOND MIXTURE: 1. Cream sugar, shortening, and vanilla with mixer until fluffy and less grainy. Be patient, this is an important step. 2. Add and mix completely cooled BASE little by little-not all at once. If you add hot or warm base to mixture, it will melt the shortening and the filling will not coagulate.
Optional: Add one cup of prepared frosting to extend the recipe. or Add one to two cups of confectioners sugar to create a fluffier filling.

Notes: This filling is the BEST whoppie pie filling I've every had. It is also very good as a cake filling, or for filled cupcakes. For cupcakes: Cut a cone shape out of the top of the cupcake-so there is a pocket. Fill the hole with filling and top with the cone shape cut out of the top.
