2 cups white sugar
1 cup shortening (butter flavored Crisco)
6 Tbsp. hot water
2 tsp. baking soda
4 eggs
4 cups flour
6 mashed ripe bananas

Directions:
Directions:
Preheat oven to 375º. Mix shortening, sugar & eggs until well beaten. Dissolve soda in hot water then add to mixture. Then add 2 cups of the flour blend well. Then add the bananas and rest of the flour. The batter will be thicker then the constituency of cake batter. Bake for 30 - 45 minutes depending on the size of the pan. I like to use mini bread pans and fill about ¾ full. It will make about 8 mini loafs. If you use regular size bread pans it will make about 3 loafs.

When Bananas are getting ripe and I don't have enough for banana bread, I will take the skin off and put it in a plastic freezer bag and freeze until I have enough. The dark bananas are sweeter.
