1 (2 to 3 lb) chicken
1/4 c flour
1/2 c fat or salad oil
1/8 lb salami cut in strips
12 steamed mussels or 12 cleaned shrimp (fresh, frozen or canned)
1 1/2 c rice
1 1/2 tsp salt
1/2 clove garlic
1/4 tsp dry mustard
1/4 tsp oregano or thyme
2 1/2 c water

Clean and cut chicken into 12 pieces. Wash, dry and dip in flour. Heat fat in pressure cooker. Brown chicken well and remove from cooker. Add shrimps, salami and rice to fat. Heat until rice is brown stirring occasionally. Return chicken to cooker. Add salt, garlic, oregano, mustard and water. Put cover on cooker and bring steam to 15 lb pressure according to instructions. Cook under pressure 10 min. Remove from heat and place cooker under cold water immediately. Remove cover and serve at once.
