3 (about 4 pounds each) chickens, each cut into quarters, skin removed if you like.
1-1/2 teaspoons salt
2 lemons cut into wedges
1 large onion cut into wedges

Directions:
Directions:
Preheat oven to 425 degrees and arrange chicken in a large roasting pan overlapping pieces if necessary. Sprinkle with salt and top with lemon wedges and onion. Cover roasting pan tightly with heavy-duty foil. Oven-steam chicken 1 hour and 15 minutes or until juices run clear when thickest part is pierced with tip of knife. Turn chicken over halfway through baking time to ensure even cooking.

I found this recipe on-line while looking for the best way to pre-cook chicken to then barbecue on the grill. I used a bottled barbecue sauce which Dad brushed on when he put the chicken on the grill. The steaming ensured that the chicken was cooked through and it didn’t have to stay on the grill very long. 10/21/13
