4 skinless, boneless chicken breasts
2 tablespoons extra virgin olive oil
1/2 cup peach iced tea (I used Snapple)
1/2 cup peach preserves
1/4 cup chili sauce
2 tablespoons molasses
Salt and pepper to taste

Directions:
Rinse chicken breasts under cold water and pat dry with paper towels. Season with salt and pepper. Heat oil in a large skillet over medium heat. Brown chicken on both sides, about 3 minutes per side, remove to a plate. Remove skillet from heat and carefully add peach tea. Return pan to heat and deglaze pan by scraping up browned bits. Stir in remaining ingredients and bring to a boil. Reduce to a simmer and return chicken plus any accumulated juices to the pan. Cover and cook until chicken is cooked through about 20 to 30 minutes.

This recipe came from TV Guide “In the Kitchen with Sandra Lee”. Since the bathroom is our favorite reading place, Dad and I both read this and I decided to try it. It’s easy and delicious. 10/21/13
