Cavender’s Greek Seasoning

Generously pat the brisket with the seasoning. Seal tightly in foil, fat side up, and put in a pan or roaster. Roast for 20 hours (yes 20) at 170 degrees.

We were watching a cooking demonstration at the State Fair in August, 2011. A guy on the stage who was not doing the demo just threw this out as the best way to cook a brisket. We tried it and loved it. I’ve done it with both a large and smaller piece of meat. The first time I did it I didn’t realize that my “smart” oven cut itself off at some point. Luckily this was the smaller one and I turned the oven back on and it turned out okay. The next time I knew to turn the oven off and back on after 12 hours. 01/06/12
