1/2 pound chicken breast or lean pork strips
1 tablespoons cornstarch
3/4 cup plus 2 tablespoons chicken broth
1 1/2 teaspoons soy sauce
2 1/2 cups frozen stir-fry vegetables thawed
1/8 teaspoon ground ginger
1/8 teaspoon garlic powder or crushed fresh garlic

Directions:

Mix cornstarch, broth and soy. Spray non-stick skillet with vegetable cooking spray and heat one minute. Add chicken or pork, stir-fry until brown and remove. Add vegetables, ginger and garlic and stir-fry until tender-crisp. Stir in cornstarch mixture, cook and stir until mixture boils and thickens. Return chicken to skillet and heat through.

This is an internet recipe I scaled for two people. Double everything for 4 servings, chicken broth would be 1 3/4 cups. You can serve this over hot, cooked rice or Chinese noodles. 01/03/12
