3/4 C chopped Walnuts - toasted in oil
2 large Shallots - chopped
1/4 C Fresh Parsley - chopped
6 oz Monterey Jack shredded

Dressing
2/3 C Oil
2 Tbsp Olive Oil
2 Tbsp Red Wine Vinegar
4 tsp Dijon Mustard
1 tsp Sugar
1/4 tsp Salt
fresh ground Pepper to taste
