6 chicken breast halves, cooked, deboned (6 cups chopped poultry)
2 pkgs. Frozen chopped broccoli (Divan)
2 pkgs. Frozen spinach (Florentine)
2 cans cream of mushroom soup
1/2 cup chicken broth
1 cup mayonnaise
1 8 ounce carton sour cream
1 cup grated sharp cheddar cheese
1 tablespoon lemon juice
1 teaspoon curry powder
Salt and pepper to taste
White wine to taste (optional)
1/2 cup grated parmesan cheese
1/2 cup soft bread crumbs

Directions:
Directions:
Cook and drain broccoli or spinach. Mix all ingredients except parmesan and bread crumbs, spread in a buttered 13x9 casserole dish. Combine the parmesan and bread crumbs and sprinkle evenly over the top of the casserole. Bake at 350 for 30 minutes.

This is a good use for leftover Thanksgiving turkey or a rotissieri chicken from the grocery. You can put it together and then freeze it – thaw and bake. Good for unexpected company. 01/03/12
