1/2 cup orange marmalade
2 tablespoons orange juice
2 tablespoons Dijon mustard
1 tablespoon soy sauce
1/2 teaspoon minced garlic
1/4 to1/2 teaspoon red pepper flakes
4 bone-in pork loin chops about 1/2 inch thick
Flour, salt and pepper
1 teaspoon canola oil

Directions:
Directions:
Mix first six ingredients, set aside. Dredge pork chops in flour, salt and pepper each side. Heat canola oil in skillet to medium high, brown pork chops on each side. Lower heat and cook for about 10 minutes, turning once. Remove chops from skillet and poor in marmalade mixture. Cook 3 or 4 minutes until mixture has thickened. Replace pork chops turning to pick up sauce, then cook for 1 or 2 more minutes

This is a quick and easy dish to prepare. I found the recipe on-line and made a couple of changes. Served with mac and cheese and some applesauce for a filling meal. 01/20/11
