2 cups milk
2 eggs beaten
2 tablespoons butter or margarine, melted
2 teaspoons paprika
1-1/2 teaspoons salt
1 teaspoon pepper
1 (2-1/2 to 3 pound) broiler-fryer, cut up
Additional pepper
All-purpose flour
Vegetable oil

Directions:

Combine first six ingredients, mix well. Place chicken in a shallow pan and pour milk mixture over top. Refrigerate at least 15 minutes. Remove chicken from liquid and sprinkle lightly with additional pepper. Dredge in flour and let stand 5 or so minutes. Heat 1 inch of oil in a large skillet to 325 degrees. Add chicken and fry 30 minutes or until golden brown, turning once. Drain on paper towels.

Addition from Food Network 01/06/12 1-1/2 inches of oil at 350 degrees, fry 6 minutes covered, then 9 minutes uncovered. Turn and cook the same way again.

This recipe came from my 1982 Southern Living cookbook (my bible, I’ve made a lot of recipes from it). It’s a lot easier just to go to KFC but every now and then I like home fried and usually serve this with mashed potatoes, cream gravy, and peas. You may remember your Dad getting on a lard kick this year. He decided that we’d be better off without all of the additives, etc. in modern cooking. I have done this in lard and quite honestly I think it tastes better. A tip for frying any coated meat – have your oil or lard pretty hot to start with, add the meat and let it crisp up on each side before turning the heat down. If the oil isn’t hot enough, your coating will fall off. 12/29/08
