1 pound ground chicken
1 large egg
1/2 cup freshly grated Parmesan cheese
1/2 cup breadcrumbs
2 cloves minced garlic
2 teaspoons fresh oregano, chopped
1/2 teaspoon salt
2 tablespoons olive oil
1 onion diced
1 14-ounce can tomato sauce
1 14-ounce can diced tomatoes with Italian herbs
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup freshly grated Parmesan cheese
1 pound spaghetti

Directions:

Mix first seven ingredients in a large bowl using your hands until evenly combined. Divide mixture in half and shape into 1-inch balls. Heat olive oil in a skillet over medium-high heat. Add meatballs, up to 8 at a time, and cook until all sides are browned, approximately 5 minutes for each meatball. Remove with slotted spoon and place on a plate. Reduce heat to medium-low. Add onions and sauté about 3 minutes. Stir in tomato sauce and diced tomatoes. Simmer mixture for 10 minutes. Gently add all meatballs to the sauce, cover pan and simmer 20 minutes. Sprinkle salt and pepper into mixture. Cook spaghetti, divide on four plates, cover with meatballs and sauce and add grated Parmesan.

This is an attempt to get away from using red meat plus the chicken meatballs are just as tasty. I don’t like an overwhelming tomato flavor so I usually add two or three beef boullion cubes to any Italian-style tomato sauce. 12/29/08
