1 3-1/2 to 4 pound pork shoulder roast

Sauce
1 cup ketchup
1/2 cup firmly packed brown sugar
2 teaspoons salt
1 teaspoon pepper
1 to 2 tablespoons chili powder (I use 1)
1/2 cup plus 2 tablespoons cider vinegar
2 tablespoons lemon juice
1/4 cup Worcestershire sauce
2 teaspoons prepared mustard

Directions:

Cover with lightly salted water in a large dutch oven. Cover and cook over medium heat 2 to 2-1/2 hours or until meat is tender. Drain, cool and slice thinly, removing excess fat. Place in a shallow 2 quart baking dish.

Sauce:
Mix all sauce ingredients and spoon over meat slices coating well** Bake at 300 degrees for 45 minutes. Serve plain or on buns. Six Servings (seems like more).

This is from the 1982 Southern Living Cookbook, my favorite. You all might not remember this but I used to make this barbecue at home up to the **, freeze in an aluminum disposable pan and trot it down to Gulf Shores with us for a vacation meal. Then I could just thaw it, bake it and serve it. I never wanted to spend too much time in the kitchen when the beach beckoned. 12/05/05
