Ingredients: 1 3-1/2 to 4 pound pork shoulder roast
Sauce 1 cup ketchup 1/2 cup firmly packed brown sugar 2 teaspoons salt 1 teaspoon pepper 1 to 2 tablespoons chili powder (I use 1) 1/2 cup plus 2 tablespoons cider vinegar 2 tablespoons lemon juice 1/4 cup Worcestershire sauce 2 teaspoons prepared mustard

Directions:Cover with lightly salted water in a large dutch oven. Cover and cook over medium heat 2 to 2-1/2 hours or until meat is tender. Drain, cool and slice thinly, removing excess fat. Place in a shallow 2 quart baking dish.
Sauce: Mix all sauce ingredients and spoon over meat slices coating well** Bake at 300 degrees for 45 minutes. Serve plain or on buns. Six Servings (seems like more). |

Notes: This is from the 1982 Southern Living Cookbook, my favorite. You all might not remember this but I used to make this barbecue at home up to the **, freeze in an aluminum disposable pan and trot it down to Gulf Shores with us for a vacation meal. Then I could just thaw it, bake it and serve it. I never wanted to spend too much time in the kitchen when the beach beckoned. 12/05/05
