2 sticks butter
2 cups sugar
3 eggs
1 cup buttermilk
1 cup of Blackberry Jam
1 cup nuts (optional)
1 cup raisins
3 cups flour
2 teaspoons baking soda
3/4 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt

FILLING AND ICING
1 box light brown sugar
1 1/2 cup raisins
1 1/2 cup cream
3/4 cup of Jam
1 stick of butter
1/4 cup walnuts

Directions:
Directions:
Blend butter and sugar, add eggs, sift together 2 1/2 cups flour and other dry ingredients. Add alternately with milk. Stir in nuts and jam. Put raisins in pan, cover with water and bring to boil. Drain and roll raisins in remaining 1/2 cup flour. Add to mixture. Grease and flour 3 9-inch round cake pans. Divide batter into 3 pans. Bake at 350 degrees until done – about 45 minutes.

FILLING AND ICING
Cook sugar, cream and raisins until it makes a ball in cold water. Remove from heat, beat in butter and walnuts. Put between layers and over cake

This is Tom’s mother’s recipe for Jam Cake. She always made it for Christmas and it was his favorite. Although I personally have never made this recipe, I think you should have a copy for your family records. Aunt Janice gave me this copy and thought we should keep it in the family. Maybe we can surprise Grandpa and make it for him one Christmas.
