4 small all-yellow bananas, peeled and cut in half crosswise and lengthwise, brush with lemon juice.
2/3 cup packed brown sugar
6 tablespoons butter
Ground cinnamon
3 tablespoons banana liqueur
1/2 cup light rum
Vanilla ice cream

Directions:
Directions:
1 Melt brown sugar and butter in a chafing dish or skillet, stirring often.
2 Add bananas and sauté just until soft (don’t overcook). Sprinkle with cinnamon.
3 Drizzle banana liqueur over all.
4 In small saucepan, heat rum over low heat just till warm. Pour over bananas, but do not stir into sauce. CAREFULLY LIGHT LIQUOR and keep spooning sauce over bananas till flames die.
5 Scoop ice cream into 4 large dessert dishes. Spoon bananas and sauce over and serve immediately.

This recipe is used only on special occasions. We had this for dessert when Katie visited us in Tyler. I taught Uncle Mike this recipe when he was single and he made a big hit with his friends—they didn’t believe him when he said he would make “Bananas Foster” for their dessert at one of their get-togethers.
