1 cup pecans or pecan pieces
1 cup sugar
1/2 cup light corn syrup
1 teaspoon butter or margarine
1 teaspoon vanilla extract
1 teaspoon baking soda

Directions:
Directions:
Combine sugar and corn syrup in a 1 1/2 quart glass mixing bowl, stir well. Microwave on high for 4 minutes. Stir in pecans, microwave on high 3 to 4 minutes until lightly browned. Stir in butter and vanilla and microwave 1 more minute, then stir in soda. Pour mixture onto a lightly greased baking sheet and cool. Break into pieces and store in airtight container. Yield: about 3/4 pound.

I don’t know where I got this and as I was typing I saw a basic flaw. It calls for 1 cup pecans and then 1 cup pecan pieces. I believe 1 cup only will do but will have to test this come Christmas time. (I did and I changed). I suppose you could make this with 1 cup of any kind of nuts if you don’t like pecans. Be careful on the second step, I managed to burn a batch by letting it get too brown. Use a clear bowl so you can see the color. The addition of the baking soda will surprise you! 10/02/05
