Southern Banana Pudding Recipe

1 package (6-serving size) Jello Brand Banana Cream Flavor Pudding and Pie Filling
3 egg yolks, slightly beaten
3 3/4 cups milk
2 1/2 dozen vanilla wafers
2 large bananas sliced

3 egg whites
Dash of salt
1/3 cup sugar

Directions:
Directions:
Combine pudding mix, egg yolks and milk in saucepan. Cook and stir over medium heat until mixture comes to a full boil. Remove from heat. Arrange layer of vanilla wafers in bottom of a 2 quart baking dish. Add a layer of banana slices and of pudding. Continue layering wafers, banana and pudding, ending with pudding. Beat egg whites with salt until foamy throughout. Gradually beat in sugar and continue beating until mixture forms stiff shiny peaks. Spoon lightly onto pudding, sealing edges well. Bake at 425 degrees for 5 to 10 minutes, or until meringue is lightly browned. Serve warm or chilled. Makes 12 servings.

Another one of my childhood favorites, Grandmam used to make this a lot. It is a Jello recipe rather than hers but it tastes just the same. 12/11/05
