1 stick butter softened
1 cup flour
1 cup sugar
1/2 cup milk
1/2 teaspoon baking powder
1 can pie fruit

Directions:

Mash and spread butter in an 8x8 square glass casserole. Mix the flour, sugar, milk and baking powder together an spread over butter. Pour fruit on top and bake for 45-60 minutes at 350 degrees.

This recipe came from a work friend, Marilyn Bedell. She had just gotten laid off from GE and invited Linda and me to lunch to commiserate. (I’m not sure why I remember this so well, it was a long time ago). Anyway I’ve made it dozens of times because I almost always have all the ingredients on hand and it’s so easy to make. I called it “squirt” cobbler because Dad used to tease me about squirting out a cobbler although he used a rude noise rather than the word. I’ve doubled this into a larger pan and used two kinds of fruit. 12/11/05
