6 slices bread
butter or margarine
1 pound bulk pork sausage
1 1/2 cups (6 ounces) shredded longhorn cheese
6 eggs, beaten
2 cups half-and-half
1 teaspoon salt

Directions:
Directions:
Remove crusts from bread; spread bread slices with butter. Place in a greased 13x9x2 inch baking dish and set aside. Cook sausage until browned, stirring to crumble, drain well. Spoon sausage over bread slices; sprinkle with cheese. Combine eggs, half-and-half, and salt; mix well and pour over cheese. Cover casserole and chill overnight. Remove from refrigerator 15 minutes before baking. Bake casserole uncovered at 350 degrees for 45 minutes or until set. Yield: 8 servings.

This dish, the cheesy grits casserole, and the hot fruit bake came from a Southern Living magazine and the menu appealed to me because each dish could be made the day before. That way brunch could cook while we opened presents and ate Aunt Anne’s coffee cake. Somewhere along the line, this became your Dad’s job and I was more than happy to give it to him. When we first started making it, you couldn’t find shredded longhorn (colby) and shredding it was part of the job. 10/01/05
