1 egg
1/2 cup mayonnaise or salad dressing
1 1/3 cups mashed fully ripe bananas (about 3)
1 1/2 cups flour
1 cup sugar
1/2 cup chopped walnuts
1 teaspoon baking soda
1 teaspoon salt

Directions:
Directions:
Preheat oven to 350 degrees. Beat egg, mayo and bananas in large bowl with whisk until well blended. Mix remaining ingredients in separate bowl. Add to banana mixture; stir until just moistened. Pour into greased 9x5 inch loaf pan. Bake 1 hour or until toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan to wire rack and cool completely.

I don’t know how many rotten bananas I threw away before I found this recipe. I like bananas on cereal and usually keep them around but don’t always eat cereal and the bananas end up going bad. This is so simple to make and it turns out well. It’s very good warmed and then spread with butter of cream cheese
