Ingredients: 3 lbs. Grated Gruyere cheese 4 garlic cloves, peeled 3.5 cups dry white wine 1/2 cup kirsch (cherry water) 2 tsp cornstarch 1/2 tsp ground black pepper pinch ground nutmeg pinch baking soda 1.5 loaves French bread, cut into approx.1.4 inch cubes

Directions:Put peeled garlic in Fondue pot and rub thoroughly, add Gruyere cheese and white wine. Stir on low heat until ingredients are mixed and bring to a simmer. Mix Kirsch and cornstarch and add to pot. Stir pot until it simmers. Season with pepper and nutmeg. Right before serving add baking powder. While eating keep Fondue pot simmering on a food warmer |

Notes: My friend Claude is from Switzerland. He is a chef, accomplished skier and avid bicycle and motorcycle rider. We recently enjoyed a "Fondue" dinner with him and his family. He told us that this recipe is from his mother. A group around a fondue pot is relaxed and friendly. So choose your own wine and have some friends in for a pleasant evening.
