10 lbs pork (picnic shoulder or other)
12 dried red chilies (New Mexico is kind I use but less spicy is California)
3 bay leaves
1 onion chopped
1 garlic
salt
-----
Garnish
avocado
cilantro
onion
green pepper
cabbage
oregano
lime
radish
white Hominy
tostada chips


Directions:
Directions:
1) remove all fat and skin from meet and cut into pieces. Put in pot and f ully cover with water. Add onion, salt and cook until meat falls apart.

2) remove tail from chilies and break them in half and shake seeds out of them. Put chilies in small pan and cover with water and bring to boil. Allow to cool. blend them in blender with water, garlic, bay leaves and 1 tsp of salt. Set aside.

3) rinse hominy

4) serve with all garnish items in separate bowls.
