1 c. butter or margarine (softened)
1 c. sugar
1 cu. firmly packed brown sugar
1 egg
1 c. vegetable oil (I use a little less)
1 tsp. vanilla extract
3 1/2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 c. regular oats, uncooked
1 c. crushed corn flakes
1/2 c. flaked coconut
1/2 c. chopped pecans

1. Cream butter. Gradually add sugars, beating well at medium speed with electric mixer.
2. Add egg and beat well.
3. Add oil & vanilla, mixing well.
4. Combine flour, soda & salt. Add to creamed mixture, mixing well.
5. Stir in oats & remaining ingredients.
6. I usually place in the frig for a little to help firm the mixture.
7. Shape dough into 1" balls. Place on ungreased cookie sheet. Flatten each ball with tines of a fork.
8. Bake at 325º for 15 minutes. Remove to wire racks to cool

I found this recipe in Southern Living and it has been a hit with everyone for years. I usually triple to recipe since they go so fast. We keep these in the freezer - hence the cold cookie rename.
