Ingredients: CRUST: 2 cups Graham cracker crumbs, fine 1/2 cup sugar 1/4 tsp. cinnamon 1/8 tsp. nutmeg 1/2 cup butter
FILLING: 1 oz. unsweetened chocolate, one square 2 packages Philadelphia cream cheese, 8 oz. each 1 cup sugar 6 eggs, separated 1 tsp. vanilla 1 tbsp. orange zest, grated from surface of orange peel 1 tbsp. lemon juice 1 cup whipping cream

Directions:CRUST: Combine crumbs, sugar and spices; cut in the butter. Press mixture evenly on bottom and sides of heavily buttered 9" or 10" spring form pan. Chill.
FILLING: Melt chocolate over hot water. Meanwhile blend cream cheese and sugar until creamy and light. Add egg yolks on at a time beating well after each addition; stir in vanilla, orange peel and juice. Beat egg whites until stiff but not dry; spoon onto cheese mixture. Whip cream; fold with egg whites into cheese mixture until well blended.
Spoon 1/3 of the filling into crumb-lined pan; trickle a little of the melted chocolate over the surface; swirl lightly into filling with tip of knife. Repeat twice more, ending with chocolate. Bake in a very slow oven (300º F) one hour. Turn heat off, leave cheesecake in oven with door closed one hour longer. Remove from oven, cool at room temperature , then chill. |
