1 cup sugar
1 tablespoon ground cinnamon
2 teaspoons ground nutmeg
1/2 teaspoon salt
2 egg whites
3 tablespoons water
6 cups pecan halves

Directions:
Directions:
Combine sugar, cinnamon, nutmeg and salt; set aside. Beat egg whites (at room temperature) and water until foamy. Gradually add the sugar mixture, 1 tablespoon at a time, beating until stiff peaks form. Fold in pecan halves. Pour pecans on a well-greased 15x10x1 inch jellyroll pan. Bake at 300 degrees for 30 minutes, stirring every 10 minutes. Cool and store in an airtight container. Yield: 6 cups.
