3 tablespoons lemon juice
2 tablespoons chopped fresh parsley (or 1 tablespoon dried)
1/2 teaspoon salt
1/4 teaspoon dried tarragon leaves, crushed
Generous dash freshly ground pepper
1/2 cup olive oil
1 clove garlic
1/2 pound small or medium fresh mushrooms

Directions:
Directions:
To make marinade, combine lemon juice, parsley, salt, tarragon and pepper in medium bowl. Add oil in slow stead stream, whisking until oil is thoroughly blended. Lightly crush garlic with flat side of chef’s knife or mallet. Spear garlic with small wooden toothpick and add to marinade. Slice stems from mushrooms; reserve stems for another use (garbage can). Wipe mushroom caps clean with damp kitchen towel. (I wash mine although they say not to.) Add mushrooms to marinade; mix well. Marinate, covered, in refrigerator 4 hours or overnight, stirring occasionally. Remove and discard garlic before serving. Makes about 2 cups.
