1 large head of garlic
1/2 teaspoon olive oil
salt and pepper

Directions:
Directions:
Slice the garlic head in half (through the cloves) and also slice off the twisted end so each half will sit flat. Place on a square of aluminum foil. Sprinkle with salt and pepper and top with olive oil. Bake at 400 degrees for 45 minutes, open up the foil and bake for 10 minutes more. When cooled, squeeze the cloves out of the skin.

This came from one of Emeril’s cookbooks, I use a little more olive oil than he suggests. Since I use this as an appetizer, I roast several cloves at a time and serve with toasted bread rounds and crumbled blue cheese. The garlic becomes a lot milder with roasting.
