"As viscous as motor oil swirled in a swamp, redolent of burnt bell peppers nested in by incontinent mice and a finish reminiscent of the dregs of a stale can of Coca-Cola that someone has been using as an ashtray. Not a bad drink, though."--Excerpt from "The Moose Turd Wine Tasting" by T. A. Nonymous

Ingredients:
Ingredients:
2 8 ounce packages cream cheese, softened
1 tablespoon horseradish (I like a little more horseradish)
1 teaspoon celery salt
1/2 teaspoon onion salt
1/2 teaspoon garlic salt
1 cup shredded dried beef
Parsley flakes or chopped nuts

Directions:
Directions:
DAY BEFORE: In small bowl with electric mixer at medium speed, blend cream cheese until smooth. Mix in horseradish and salts; add dried beef, mixing until well blended.

With hands, shape mixture into a ball. Wrap with waxed paper or plastic wrap; refrigerate overnight. When firm, reshape ball with hands and roll in parsley flakes or chopped nuts. Cover and refrigerate. Serve with Triscuits or other crackers.

Personal Notes:
Personal Notes:
Grandma: I first made this cheese ball for a Derby Party in 1972 and have served it at almost every other time we entertained a large group. I like to divide into two balls—one parsley and one nuts. Also, a hint for forming ball with your hands, wet your hands before handling mixture.

Mom: Grandma brought this on Thanksgiving Day 2005 and everyone loved it. Your Dad and I finished it off the next evening
