1 1/2 pounds chicken wings (24)
1/3 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
3 tablespoons butter
2 tablespoons red wine vinegar
2 tablespoons hot red pepper sauce, or to taste

Remove and discard the wing tips, separate into 2 pieces at the joint; trim excess fat and skin. Mix the flour, salt and pepper together, coat wings with mixture and deep fry in 3 cups vegetable oil at 375 degrees. (These will cook in 10 minutes or so, turning once if using a skillet). You can do these without the flour and the frying – just grease a cookie sheet with 2 tablespoons vegetable oil and bake in the oven for 20-30 minutes at 400 degrees. Heat butter in a small saucepan over low heat until foaming, remove from heat and stir in the vinegar and hot pepper sauce. Pour over the wings and toss until evenly coated. Serve with celery sticks and blue cheese dressing.

This recipe came from the New Joy of Cooking and they say the recipe was “invented at the Anchor Bar in Buffalo, New York, in 1967. I sometimes make these up in advance and freeze in ziploc bags for our Christmas Eve buffet. I’ve also taken them to the Parks’ holiday party and folks usually like them. I usually double the sauce recipe, as Dad likes them “sloppy”. 09/30/05
