2 pounds cooked, ground, country ham (6 cups)
1 pound pork sausage
2 cups bread crumbs
2 cups milk
2 eggs
Sauce:
2 cups light brown sugar
2 cups vinegar (apple cider)
1 cup water
2 tablespoons prepared yellow mustard

Directions:

Mix ball ingredients thoroughly and chill. Roll into bite size balls. Place in a shallow baking dish. Mix sauce ingredients and pour half over the balls. Bake at 350 degrees for 30 to 45 minutes. Heat remaining sauce and pour over cooked balls.

This recipe came from the Courier-Journal Kentucky Cookbook which I’ve had for many years (pre-marriage, I think). The book cites Doe Run Inn near Brandenburg as the originator – we’ve eaten there and I think they still serve them. My first experience making them was pretty funny, I’ve halved their recipe above and it makes about 6 dozen golf-ball size balls. The book says the doubled recipe only makes about 4 dozen which was clearly wrong. We were still eating country ham balls at Easter that year. This is another freezable item, just thaw and heat.
